Only 12 km from Toro, in the province of Zamora, Matarromera is located close to the town Valdefinjas on the road that joins Toro and Venialbo. Punctuated by poor, sandy soil, with a loamy, clay and limestone subsoil, the vineyards’ entire 100 acres of land are all certified organically farmed and include 15 acres of olive trees. Grapes are meticulously picked and hand-sorted to ensure only the highest quality grapes end up in the fermentation tanks. The most striking feature of Cyan, is its old vineyard surface: 50 acres of Tinta de Toro vines that average more than 50 years-old, planted in a traditional framework and yields that barely exceed 3000kg per acre.
The Tinta de Toro variety and the traditional production method allows these wines to be kept fort a long time. Along with modern facilities the winery is equipped with the necessary machinery to reach the winery’s goal of exceptional quality. The barrel room contains 600 barrels, made from French oak and its production barely exceeds 100,000 bottles per year; this quantity allows them to maintain quality standards only available to very few wineries in Toro.
